Mounds for Breakfast

Hi lovelies! I hope that you all had a wonderful weekend! I listened to my body this weekend and gave it exactly what it needed– lots and lots of sleep. Unfortunately, I’m still fighting this bug but am hoping that it will be out of my system soon! In addition to all of the healthy food I was eating, I had a serious sweet tooth on Saturday. My usual daily dark chocolate square wasn’t cutting it, and it was clear that I wasn’t leaving the house to pick up frozen yogurt, so instead I decided to whip something up at home.

While everyone loves the combination of peanut butter and chocolate, one of my favorite combos is chocolate and coconut. (Sense a theme here? Obviously chocolate is a necessary component in any food combo.) But I still wanted to create something healthy that would have some staying power. And with those thoughts in mind, the best breakfast EVER was created.

Coconut Chocolate Chip Baked Oatmeal

Prep time: 5 minutes, Cook time: 23 minutes

Serves 1

Ingredients

  • 1/2 Cup Old-Fashioned Oats
  • 1/2 Cup Sugar Free Vanilla Coconut Milk
  • 1/4 tsp. Vanilla
  • 3 T. Reduced-Fat Coconut Flakes
  • 2 T. Chocolate chips

Directions

  1. Mix above ingredients
  2. Pour or scoop into sprayed ramekin
  3. Bake in 380 Degree oven for 20 minutes
  4. Broil on high for 3-4 minutes until top is golden
  5. Enjoy!

This is the perfect weekend breakfast but if you have a little time in the mornings this would be the fabulous decadent-tasting breakfast on a weekday! Anything to make Monday a little sweeter, right?

  1. Ooh, your breakfast creation looks fantastic! You already know that I swoon over the coconut + chocolate combo; I was eating those homemade protein bars I posted last week all weekend, and STILL didn’t grow tired of them. :-) However, now that they’re gone, I’m thinking this oatmeal might be up next–yum! Are you a fan of the Chocolate-Dipped Coconut Luna Bar, like I am? And Mounds candy bars? (<—It's been so long since I've had one of those!)

    All of this coconut and chocolate loving aside, my heart really belongs to peanut butter + chocolate. They're the gold standard when it comes to a flavor couple! I eat the two together in some form every single day.

    Hmm, favorite decadent breakfast…I'd have to go with a cinnamon pecan roll or cheese danish, alongside cheesy scrambled eggs, sauteed spinach and bacon. Sweet and savory all in one meal! :-D

  2. Yummmmmm! I’m a HUGE fan of anything coconut- but when you add chocolate, it’s that much more addicting!
    I love chocolate/peanut butter, coconut/chocolate, and pineapple/almond….. and cinnamon can belong on just about anything! :)

    My favourite decadent breakfast is pancakes with maple syrup, and I like them even better if the pancakes have chocolate chips in them. And a good old fashioned English breakfast is very yummy too but I never have the patience to make all those things!
